I was watching your Video on my husbands account. Thank you for sharing your floorplan. I really like how you went through every detail!
I would like to point out that a low kitchen counter like you would have because of the window height can cause a lot of back aches especially when the sink is even deeper. You might want to try it out before building. ❤
I also saw in a tiny house video that there are very small fireplaces in sweden to buy. I don‘t know the brand though but maybe this helps anyway.

Excellent plan. Can I suggest a folding door for the bathroom, accordion style and don't forget ventilation for the bathroom. There will be condensation from the shower.

Great home. If you don't have that half wall you could find a antique table that has folding leafs on both sides. That way you could move it wherever you want.. Good job.

The tiny floor plan looks great! Have you tried looking for any marine wood burning stoves? They can be really small.
Great layout,maybe you could raise your roof a little when putting on a new one(like Theo did),the point of the roof if the Apex. It all sounds very exciting,all those little windows let a lot of light in,maybe a glass front door too? A pocket door on the bathroom would be a space saver. Glad Poppy is on the mend. Definitely coming along for the journey.

Do you have a small space for fire wood near your wood burner? Some people elevate the wood burner so they can store wood underneath. and Poppy melts my heart!!❤❤❤
May I add an observation? When you have a mezzanine open to the kitchen, the smell of cooking will permeate into the bedding and clothes etc.

You should consider putting vertical pull-out pantry shelves in the wall between the bathroom and living room – they would slide out into the kitchen area and give you the full height of the first floor to store more stuff (canned goods, etc.)
Stove….Martin Doolard #38…. Installs a little stove in tent. Might work for You…

Oh, and about the wood burner, I don't know if this helps but there's some made with cast iron that you can check on OLX, search for "Salamandra". I also saw a cylindrical one that, maybe, could fit your plans.
There are several options, used, brand new, small, big, etc! 🌼
You could try to get a tiny sink that you can put on the corner. Or those types like Japanese bathrooms where the sink is on top of that box on the toilet (don't the English name for it hahaha)
IKEA has some options also!
So cute! You've definitely put some thought into the design. I'd change the location of the fold up table to the exterior wall with my back to that cozy fireplace. Breakfast nook esk. You could also try making the bath a wet bath so you don't have to deal with shower doors. A sink on the back of the toilet feeding "gray water" into the tank for flushing. Just some food for though.
