  1. Hey Andrea, nice pies looked amazing. I got carried away once and used all my pastry on the bases so had nothing left to put on top. I made a crumble mix and piled that on top instead. Oh my days, the juice all soaks up through the crumble. So try that next time you are making some, scrumdiddly. Enjoy xxxx

  2. Christmas Mincemeat Recipe.

    This was the recipe used by my grandmother in the early 1900s and passed on through the generations.

    For greater numbers of mince pies make double or triple the amount.

    100g/4oz each of Raisins, Sultanas and Currants.

    50g/2oz of shredded suet (or you can use ground almonds if no suet).

    1 small banana peeled and chopped.

    1 Cox apple, peeled and chopped or grated.

    50-75g/2-3oz cut mixed peel.

    1 Tablespoon Black Treacle.

    100g/4oz Caster or Granulated Sugar.

    Grated rind and juice of 1 Lemon.

    Brandy, if desired.

    Mix well together and refrigerate in a covered container for 3 – 4 weeks before required. Stir occasionally.

    Make, bake and enjoy. 🌲

  3. Hi Nick and Angela , your chocolate and carmel slice inspired me to make it ,it is a hit with everyone.. Topping is bit messy however as with the additives it does not set I have used coffee essense and Coffee Marsala as well as the cream. Took it along as supper plate to our favourite Carols night last night. When I used to make friut mince pies I used grated apple along with the fruit mixture and booze. The last time I ever used lard was in cookery class at high school back in the 60's. I was always very generous with the booze and let the mixture sit in an airtight container for as long as possible.

    Homemade baileys:

    1 cup single cream.
    2 cups whiskey. Get the cheapest.
    1 can condensed milk. Sweet.
    1 espresso or 1 tspn instant coffee.
    1tspn cacao.
    1tspn vanilla essence.
    1/2 tspn almond essence.

    Blend everything for 30 seconds.
    Cin cin.

  5. Happy Anniversary. Clotted cream…. Miss that too. Sad thing is it is easy to make…basically full cream milk in a dish. keep warm and covered skim off the dream as it clots on the top and put in a bowl and cover.

  8. MINCEMEAT RECIPE(s)
    1.
    1 lb finely chopped beef suet
    1 🎉 tart apples peeled and chopped
    1 lb sultanas
    1 lb raisins (stones and quartered)
    1 lb currants
    1 lb castor sugar
    Half lb shredded mixed candied peel
    1 saltspoon (?) each of nutmeg, mace and cinnamon.
    1 glass port wine
    Juice of 2 lemons

    Add all ingredients together, mix well. Press int9 jars. Cover and keep in a cool dry place.

  11. Happy belated wedding anniversary. Plenty wood for the fire now Nick. Is it possible to get the larger tree de barked then sliced lenghwise so you can then utise the wood,for shelves ect? Loved the little up close piggy snouts shots. I shall have a look in my recipe books for you Ange. If you fancy an alternative to pies then i have a recipe for mince pie scones. X

  12. A long handled Cornish shovel used right , is a proper job I’ve even seen a breakfast fried on one , the only thing you don’t do like I do is spit on your hands ( unless you do it of camera ). 🤪🤪🤪geddon boy

  14. Hi Nick and Angie. I really hope you searched and maybe found mushrooms under the pine trees. They are very tasty. They have yellow/orange flesh and a sponge on the bottom that needs to be cleaned.
