Jasper would you not consider casing the walls with timber and pour concrete to the exact level that you need. You should case the front,back and the gables. It’s call shuttering and it will make building your roof so much easier. You could even sat a few long pieces of treaded bar in the concrete to bolt your wall plate too. Square everything up and everything will fall into place.

Great watching all your hard work on your project, hope your eye is not too bad, splash with lots of water it may be brick dust which is not good.
