  1. Grits are made from corn soaked in lye. The corn can be eaten whole after soaking, this is called hominy. If it’s ground after soaking, it’s called grits. It was a way to use tough, course corn like animal feed corn for human consumption. It is associated with southern US, not commonly found throughout all the US.
