  1. I add in some carrot and red or orange bell pepper into my curry. It is one of my favorite meals. Another quick and easy curry is to use olive oil with peanut butter, freshly ground black pepper, and a bit of curry in the serving bowl. I then make my favorite pasta and sweat some onions, carrot slivers, and bell peppers while it is cooking. The veg are added to the peanut butter mix and the pasta into the bowl from the pot. The pasta heats the sauce and it is yummy. Everything is done in the time it takes to boil the pasta.

  2. Hi Elaine and Darren, in one of your early blogs you mentioned purchasing the property next door. M. I wondered if you had looked into that as it would make a lovely walled garden where you could sit if you built a gazebo. I have visions of you sitting there on a garden swing sipping a nice red. Merry. Christmas.

  3. Yummy! The curry looked fantastic! I agree about the yellow curry powder not being as spicy. I have a red & green curry paste & it's very spicy. The town's fountains were so lovely. Thanks for taking us along!

  4. Traveling with you to the different villages & seeing the fountains was such a treat! It’s always nice to see the countryside in your area! I’ve never seen fountains where the villagers get their water like that. We have rivers & creeks with water, but we have to drill wells for potable water. Fun fact : Nebraska has more miles of rivers & creeks than any other state. Merry Christmas! 💜🔔🎄

  5. Dear Elaine and Darren, thank you for your video. It was lovely to have a window into a part of your morning and afternoon. Your daily videos are turning into a much antecipated daily thing. Well nightly, as i am 8 hours ahead of you guys. Lovely curry. Miss the currry mix there, as over here the curry mix is different with almost no Saffron amd heavy on turmeric and palm oil (which i abhorr). I miss the rice curry i used to have there Goa style.   6. I've fallen in love with you two! You're so honest, and sweet and I've really enjoyed the recent daily videos.

    Can I just say Elaine, you have been a true inspiration to me. I've made my own garland for the fireplace from local plants and trees! I've made my skint Christmas more creative, artsy and appreciating the small things in life. I was feeling low and stuck in a rut due to not working at the moment and feeling Christmas wasn't going to be as special. You have shown me that a few handmade cards and mince pies, being part of your community and slowly working towards a goal is what matters.
