I'm Italian and I crossed trekking all Spain twice from east to west and south to north and all Portugal south to north once. Some areas like the Mesetas look like a western movie😱 I met farmers struggling from water and it was the end of October not mid summer. In Italy the problem is a bit different, snow on the mountains melts very fast in spring and in the centre-south the Appennine mountains by early July turn into a pile of naked rocks. Last summer there wasn't enough grass for the livestock, most of the farmers had to use the hay stocked for the winter or bring down the livestock to the pastures in the valleys. The production of mid summer fruits was really bad, figs dried out on the trees before to get mature, potatoes went very bad too. But we are harvesting now plenty of chestnuts and walnuts, large in size and healthy. Olives are looking well too. It's mid October now, still little rain and max temps abow everage.

I rolled my eyes so much in the first 5 minutes of this. Until it's explains how Spain is using umpteen times the amount of water her many is… I am not buying it! Water park water is recycled. Yes deforestation can play a major roll but which is it…theyre building up. Plant some trees. People DO NOT contribute more them 10% at most (think China..India) to climate change. Stop trying to reduce carbon, TREES NEED CARBON and fix the actual problem.

Do what California did. Build aqueducts from the mountains in the north to the cities in the south. It wont solve all your problems but it will help immensely. Los Angeles, California is situated in a hot, dry Mediterranean climate (drier than Spain) and gets most of its water from hundreds of miles away.
