Same question I had when I watched your brother's video on this – does the sewage waste just drop into that square pit which then runs into the main sewers? Alot of sewer gas would then escape out the lid of that?

A friend had an expression that fits James to a "t". Handier than pockets on a shirt. You all are making a ton of progress on your place. It may seem to be slow going from your perspective but looks pretty fast from mine. It's probably the magic of the camera and YouTube.

Wow, that is back-breaking work–Huge job, great accomplishment and it involves careful planning and then careful execution of those plans to have it work properly. Hope future folks using the running water and disposal will not take it for granted. It makes me appreciate the work that went into making my life and living easy.
