you should add extra beams at the ceiling because it looks like it start to "sag" so there's a chance it can fail and crack sooner or later

I love that while removing this many layers of plaster you discovered all the secrets and hidden details of the original house, and this would not have happened if you had decided to put plaster once more. It's funny how you can see all the stupid decisions that were made to transform a nice house into some "more lucrative" (I guess) mini-apartments, ruining some great things along the way.
I wish I have that kind of energy you have.

There is only one way of doing it – do it right. Do it the best way you can and dont stop before everything is done. I am in the same situation. It was really hard to keep motivated as everything was really horrible ugly, and wet and, dirty. Now we are glad we kept building almost everything from scratch.
A "ceiling rose" in the UK
Man fills his floor with neighbors dead skin cells and hair…nice! (BTW, It’s a ceiling rose)
We call it a roset as well or just a decorative fixture ring we have one with hole in the center to mount a light fixture
Will you be using leveling conrete to level the floors? It will also help add some sound dampening from downstairs. You can use styrofoam first to do the majority of the leveling and then you just have to add 1 or 2 cm of leveling concrete to finish so that you don't add insane amounts of weight to the floor system
Damn that ceiling was ridiculous! When we had our roof replaced, the contractor insisted we cover all of our furniture first. The amount of dust, and pebbles coming through the gaps in our open beam ceiling was insane.

I observed my demo contractors that they took down a wall from the bottom, then the rest will come down under its own weight.

I just finished gutting my kitchen in my house 140 year old house in Philly and the ceiling demo was definitely the worst. That dust is gnarly, haha

As you know getting rid of the debris is a lot of work. I think the last person remodeling the apartment didn't want to take all those bricks out so they just stacked them up in the voids of the wall. Are you going to take the floor up also?

The English is a ceiling rose (at least in uk). Some people also say ceiling medallion. And if it doesn't have a light hanging down it's a decrative boss.

The "english" word for it is rosette. lol Also Medallion or fancy trim ring. But Rosette is the proper term.

a thing you can do when you don't have a wall is making docks for cables, that makes it easier when you need to install electrics in the future
I do hope you keep some of that exposed brick. Such a cool bit of history and a beautiful pattern.
