As there is a shower on the lower floor, a bath in the upstairs would be good. Keep the beams exposed but dry wall between the beams and paint. It is a lovely property.
I am Portuguese/ Canadian and I love the open concept layout, and the high ceilings with exposed timbers. Very nice little house !!!!!

Definitely don't leave the OSB exposed. There are many fans of this look now but, with time, OSB just gets uglier and uglier. It just looks like you were cutting costs, or run out of money to finish the house properly.
Pity the upstairs bedroom height is somewhat restricted with small windows.
Osb board would be better covered.
Also insulate between rafters

This project looks really promising, Edgar, you should be proud! That ceiling should be plasterboarded and painted, exposing the beams. The ceiling could also incorporate some insulation. How far will you take the project before selling? I’d be tempted to buy in its current state (or following the work to fix the damp) so that I could fit the house out to my preference
